A new supper club begins this month, run by Sobremesa – recently started by Susie Corley, a Cordon Bleu trained chef and lover of Spanish food.
As well as monthly supper clubs, Sobremesa offers catering and cookery classes from Susie’s countryside home near Witney.
Sobremesa in Spanish means: “the time spent around the table after lunch or dinner talking to the people with whom you shared the meal; time to digest and savour both food and friendship”.
The owner and chef, Susie, explains her love of Spanish food: “Spanish food has always been a big part of my life; my mum is Spanish and my maternal family has always been based in the beautiful city of Granada.
“Long summers in Spain, eating the traditional Spanish food of my Abuela, gave me a huge appreciation and passion for what Spanish food represents: great ingredients, simplicity and huge flavour.”
“Sobremesa is inspired by the relaxed and generous spirit of Spanish cookery, which is something I hope to capture in my supper clubs. Sobremesa is a concept that originates in Spain, but speaks to anyone that enjoys good food and good company.
“The food is not just Spanish – it’s inspired by the spirit of Spanish cooking. I believe that food should be wholesome, uncomplicated and is best enjoyed in good company.”
The supper club promises wholesome, autumnal fare, with its own signature Spanish flavour. Dishes such as venison with a sherry sauce, a Spanish twist on a French onion soup, and a creamy mousse of picant Spanish cabrales cheese with Pedro Ximenez poached pears, are some of the dishes that comprise the six course tasting menu. There will also be Sobremesa’s signature croquetas de jamón.
The supper club hopes to live up to the overall ethos of the company, captured by the name Sobremesa, which in Spanish means: “the time spent around the table after lunch or dinner talking to the people with whom you shared the meal; time to digest and savour both food and friendship”.
The first supper club runs this November, to be quickly followed by a special ‘Spanish Christmas’ supper club in December. This festive supper club will serve some traditional Spanish Christmas dishes, as well as a Spanish twist on some more familiar Christmas favourites.
The dinners will be held in her countryside home, dating from the 18th century, in a small, quaint village just outside of Witney. The aim is to make guests feel at home, and create the best environment for enjoying good food, wine and company.
